Avocado Quesadilla- Phase Three

This one is a no-brainer.

Avocado Quesadilla

Ingredients:

  • 1 bell pepper (any of all colors)
  • 1/2 yellow onion
  • 1 garlic clove (optional)
  • 1 pound lean ground turkey (or leftover from phase two taco salad, perhaps?)
  • sprouted-grain tortilla (This kind is approved.)
  • 1/2 avocado
  • lemon or lime juice
  • chili powder
  • cilantro

Method:

  • Chop bell pepper, onion, and garlic into small pieces. Saute in frying pan with small bit of coconut oil. Add ground turkey and cook thoroughly. Season with chili powder to taste.
  • Warm tortilla on frying pan. While it’s warming, mash half an avocado. Mix in lemon or lime juice and chili powder to taste.
  • Spread avocado over warmed or toasted tortilla.
  • Top with 6 oz ground turkey mix and cilantro.
  • Cut into slices or dig right in.

Sweet Potato Pancakes: Phase Three

Phase Three recipes are easy peasy lemon squeezy. But here’s a yummy one I sorta threw together.

Sweet Potato Pancakes

Ingredients:

  • 1 cup cooked and mashed sweet potato
  • 1 egg
  • cinnamon
  • 1-2 tbsp almond milk
  • 1 tsp baking soda
  • xylitol or stevia (optional)
  • coconut oil

Method:

  • Mix sweet potato, egg, cinnamon, milk, baking soda, and sweetener.
  • Heat pan thoroughly. Melt coconut oil onto pan.
  • Start with small pancakes, like 2-3 inches in diameter. They’re really hard to flip, and they don’t stick together very well. Also, they’re really ugly.
  • Cook until they’re brown and sorta hold together. Flip and repeat.

They’re yummy with blackberries.

Taco Salad- Phase Two

My first week of phase two was ridiculously difficult. I was determined this week to come up with a recipe that tasted good and fulfilled all the requirements of a phase two meal.

Here it is.

Taco Salad

Ingredients

  • 1 bell pepper (Any or all colors)
  • 1/2 yellow onion
  • 1 garlic glove (optional if you hate cutting garlic as much as I do)
  • 1 lb lean ground turkey
  • .5-1.5 tbsp chili powder (how spicy do you like it?)
  • cumin, paprika, salt, garlic powder
  • spinach
  • green leaf lettuce
  • cilantro
  • lemon

Method

  • Chop the bell pepper and onions into small pieces. Saute without oil in a non-stick pan. Add garlic halfway through.
  • Add ground turkey and cook thoroughly.
  • Season with chili powder, cumin, paprika, salt, and garlic powder to taste.
  • Serve 6oz of turkey mix over a bed of spinach and torn green leaf lettuce
  • Top with cilantro and squeezed lemon juice.
  • Hint: Save some of the turkey mix for phase three quesadilla.
